Moody Tongue Brewery: A Sneak Peek

Resident Halfstacker, Sophia Sanchez, shares her insight on the upcoming Moody Tongue Brewery expected to open in Chicago this winter!  

"Halfstack Magazine had the enjoyment of connecting with Brew Master and Professional Chef, Jared Rouben of Pilsen's MoodyTongue Brewery. If the name rings a bell, then you sir, are correct. Jared Rouben has trained and worked with with some of the world's greatest in both the culinary and brewing fields; including having studied at the Culinary Institute of America in New York, the Siebel Institute in Chicago and Doemens Academy for Brewing in Munich. Long story short... This guy knows his shit."

In Moody Tongue beers and within Culinary Brewing, you are actually going to taste the flavor of whatever ingredient we incorporate. Otherwise, I wouldn't put it in. Everything has to have a reason and my sole reason is tasting the flavor. Not sweetness, not bitterness... Truly the flavor of apricot, the flavor of blueberries, flavor of cherries, the flavor of chocolate. This is what makes my culinary education so valuable.”
