Summer is in full swing.....  and while some continue to say that Chicago has seen a mild Summer season this year, a tasty Summer treat is never without necessity.  And whether you are basking in the breeziness of Chicago days, lounging on the California beaches or battling the Texas Summer heat, I think it's safe to say we could all use a delicious Summer cocktail at the end of a long day!   

So I made it my mission to compile a list of the tastiest drinks I could find.....  

The Strawberry Mimosa

Who doesn't love to wake up on a Sunday morning with a Mimosa in hand?  So, here's a fun little spin on the traditional orange juice and champagne mix.  

3-4 Strawberries
3 1/2 Oz. Champagne Or Sparkling Wine
3 1/2 Oz. Orange Juice

1.  Mix orange juice and strawberries with a little shaved ice in a blender until smooth. 
2.  Pour into a chilled wine goblet and add cold champagne.  Stir gently so as not to lose the bubbles.

White Strawberry Lemon Sangria  

You'll want to make this one ahead of time, as some of the ingredients need time to set.  But it will surely be worth the wait... 

2 lemons, thinly sliced
1 apple, cored and sliced (any kind)
1 cup strawberries, hulled and sliced lengthwise
1 750 ml bottle of white wine (a dry-ish white wine is best - Sauvignon Blanc or Chardonnay 
1/2 cup white rum
4 cups lemon-lime soda

1.  Add lemon slices to a large pitcher, then the apples, then the strawberries. 
2.  Pour the wine and rum over the top. 
3.  Cover and place in the refrigerator for 4-5 hours. 
4.  Remove from refrigerator and add the lemon lime soda.  Add a few pieces of the fruit to your glass and pour sangria over to serve.

The Nada Colada

For those of you ladies and gentleman watching your figures... this is the drink for you!  At only 140 calories per serving, you can enjoy this "light" classic, guilt-free.  

1 1/2 Oz Coconut Rum
1 Oz. Pineapple Juice
2 tbsp Lite 85 Vanilla Yogurt

1.  Blend ingredients together in blender with about 12 ice cubes. 
**This makes only 1 serving so double or triple the dose for multiple drinks!**

Pink Tequila

Looking for something quick and easy to make for you and your friends to sip on before a night out on the town?  Make yourself a pitcher of this delicious and fruity cocktail!

6 cups chopped watermelon
1 pint strawberries
6 limes, juiced
1 tbsp agave nectar or sugar
10 Oz. white tequila (or to taste)

1.  Combine the watermelon, strawberries, lime juice and agave nectar in a blender.  Blend on high. 
2.  In a pitcher, add a few cups of ice, pour blender mixture into the pitcher and top off with 8 oz of tequila.  Stir, taste, and add the rest of the tequila if you like.  
3.  Serve and enjoy!

Slow Melt Arnold Palmer

And last but certainly not least...  The 'Slow Melt Arnold Palmer.'  For those of you whom prefer something a little less mind-altering....  Check out this delicious & sassy twist on the lemonade, ice tea.  

1 pitcher of iced tea
1 pitcher of lemonade
4 ice cube trays

1.  Pour the lemonade into the ice cube trays and freeze for at least 4 hours.  
2.  Pour the tea into a glass up to the 2/3 mark.  Fill the lemonade ice cubes until just below the top. 

Whether you are trying to unwind after a long day at work or prepping for a backyard bbq with friends, be sure to add at least one (if not ALL) of these refreshing drinks to the menu!
